(3.2) Eat After Use

How can we experience with our senses what we take from the Earth – and what we give back to it? How do regenerative principles nourish our well-being?

With Eat After Use, Lena Beigel and the IDRV – Institute of Design Research Vienna create a multisensory experience that raises awareness of the importance of healthy soils. Culinary episodes weave together pleasure and knowledge: at the center is Lena Beigel’s creative reimagining of table culture, providing the framework for a conversation with market gardener Sarah Schmollmüller – about food, cycles, and the principles of regenerative practice.

The project unfolds in two events during VIENNA DESIGN WEEK 2025, inviting visitors to engage through taste, dialogue, and design. Two further gatherings will take place in November at Weingut Georg Toifl, who will also accompany the Vienna Design Week sessions with a pairing of regenerative organic wines.
